  • 1.5 cup Rolled oats
  • 0.5 cup Almond flour
  • 0.5 cup Pumpkin puree
  • 2 tablespoon Coconut oil
  • 3 tablespoon Maple syrup
  • 1 teaspoon Pumpkin spice
  • 1 teaspoon Vanilla extract
  • 0.5 teaspoon Baking powder
  • 0.25 teaspoon Salt
  • 0.25 cup Dried cranberries
  • 0.25 cup Chopped pecans
Instructions
  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix together the rolled oats, almond flour, pumpkin puree, coconut oil, maple syrup, pumpkin spice, vanilla extract, baking powder, and salt.
  3. Fold in the dried cranberries and chopped pecans.
  4. Scoop tablespoon-sized portions of the dough onto a baking sheet lined with parchment paper.
  5. Flatten each cookie slightly with the back of a spoon.
  6. Bake for 12 minutes, or until the edges are golden brown.
  7. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes.
  8. Transfer to a wire rack to cool completely.
