Ingredients
  • 3 cup Rolled oats
  • 1 cup Pumpkin seeds
  • 1 cup Almonds
  • 1 cup Pecans
  • 1 cup Dried cranberries
  • 1/4 cup Maple syrup
  • 2 tablespoon Coconut oil
  • 1 teaspoon Pumpkin pie spice
  • 1/2 teaspoon Vanilla extract
  • 1 pinch Salt
Instructions
  1. Preheat the oven to 325°F (160°C).
  2. In a large mixing bowl, combine the rolled oats, pumpkin seeds, almonds, pecans, dried cranberries, pumpkin pie spice, and salt.
  3. In a small saucepan, warm the maple syrup, coconut oil, and vanilla extract over low heat until melted.
  4. Pour the wet mixture over the dry ingredients and mix well until everything is evenly coated.
  5. Spread the mixture onto a baking sheet lined with parchment paper.
  6. Bake for 25-30 minutes, stirring halfway through, until golden brown.
  7. Remove from the oven and let it cool completely on the baking sheet.
  8. Once cooled, break the granola into small clusters.
  9. Store in an airtight container for up to 2 weeks.
