  • 2 cup Rolled oats
  • 1/2 cup Pumpkin seeds
  • 1/2 cup Almonds
  • 1/2 cup Pecans
  • 1/4 cup Dried cranberries
  • 1/4 cup Pumpkin puree
  • 1/4 cup Maple syrup
  • 2 tablespoon Coconut oil
  • 2 teaspoon Pumpkin spice
  • 1/2 teaspoon Vanilla extract
  • 1/4 teaspoon Salt
Instructions
  1. Preheat the oven to 325°F (163°C).
  2. In a large bowl, combine the rolled oats, pumpkin seeds, almonds, pecans, and dried cranberries.
  3. In a separate small bowl, whisk together the pumpkin puree, maple syrup, coconut oil, pumpkin spice, vanilla extract, and salt.
  4. Pour the wet mixture over the dry ingredients and stir until everything is well coated.
  5. Spread the mixture evenly on a lined baking sheet.
  6. Bake for 20-25 minutes, stirring halfway through, until the granola is golden brown and crispy.
  7. Remove from the oven and let it cool completely.
  8. Once cooled, break the granola into clusters.
  9. Store in an airtight container for up to 2 weeks.
