Ingredients
  • 500 gram Pumpkin
  • 1 piece Onion
  • 2 clove Garlic
  • 4 cup Vegetable broth
  • 1 cup Coconut milk
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoon Parsley
Instructions
  1. Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic, sauté until fragrant.
  2. Add diced pumpkin and cook for 5 minutes.
  3. Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 20 minutes, or until pumpkin is tender.
  4. Use an immersion blender or transfer the soup to a blender to puree until smooth.
  5. Return the soup to the pot, stir in coconut milk, salt, and black pepper. Simmer for another 5 minutes.
  6. Serve hot, garnished with chopped parsley.
