Ingredients
  • 2 cup Pumpkin
  • 1 medium Onion
  • 2 clove Garlic
  • 4 cup Vegetable broth
  • 1 cup Coconut milk
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Paprika
  • 2 tablespoon Olive oil
Instructions
  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and minced garlic, sauté until fragrant.
  3. Add pumpkin cubes and cook for 5 minutes.
  4. Pour in vegetable broth and bring to a boil.
  5. Reduce heat and simmer for 20 minutes, or until pumpkin is tender.
  6. Remove from heat and let it cool slightly.
  7. Using a blender, puree the soup until smooth.
  8. Return the soup to the pot and stir in coconut milk, salt, black pepper, and paprika.
  9. Cook for an additional 5 minutes.
  10. Serve hot and enjoy!
