Ingredients
  • 2 cup Pumpkin
  • 1 medium Onion
  • 2 clove Garlic
  • 4 cup Vegetable broth
  • 1 cup Coconut milk
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 teaspoon Nutmeg
Instructions
  1. Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic, and sauté until translucent.
  2. Add diced pumpkin and cook for 5 minutes, stirring occasionally.
  3. Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 20 minutes, or until pumpkin is tender.
  4. Remove from heat and let it cool slightly. Use an immersion blender or regular blender to puree the soup until smooth.
  5. Return the soup to the pot and stir in coconut milk, salt, black pepper, and nutmeg. Heat over low heat until warmed through.
  6. Serve hot and garnish with a sprinkle of nutmeg, if desired.
