Ingredients
  • 500 gram Pumpkin
  • 1 piece Onion
  • 2 clove Garlic
  • 4 cup Vegetable broth
  • 1 cup Coconut milk
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Paprika
  • 2 tablespoon Chopped parsley
Instructions
  1. Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic, and cook until softened.
  2. Add the diced pumpkin and cook for another 5 minutes.
  3. Pour in the vegetable broth and bring to a boil. Reduce heat and let it simmer for 20 minutes, or until the pumpkin is tender.
  4. Use an immersion blender to puree the soup until smooth.
  5. Stir in the coconut milk and season with salt, black pepper, and paprika.
  6. Simmer for another 5 minutes.
  7. Serve hot, garnished with chopped parsley.
