Ingredients
  • 500 gram Pumpkin
  • 1 piece Onion
  • 2 clove Garlic
  • 2 cup Vegetable broth
  • 1 cup Coconut milk
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Nutmeg
  • 2 tablespoon Parsley
Instructions
  1. Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic, and sauté until translucent.
  2. Add the diced pumpkin and cook for 5 minutes.
  3. Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 20 minutes, or until the pumpkin is tender.
  4. Use an immersion blender or transfer the mixture to a blender and blend until smooth.
  5. Return the blended soup to the pot and stir in coconut milk. Season with salt, black pepper, and nutmeg.
  6. Cook for an additional 5 minutes to allow the flavors to meld.
  7. Serve hot, garnished with fresh parsley.
