Ingredients
  • 3 cup Rolled oats
  • 1 cup Pumpkin puree
  • 1/3 cup Maple syrup
  • 1/2 cup Pecans
  • 1/4 cup Pumpkin seeds
  • 2 tablespoon Coconut oil
  • 1/2 teaspoon Cinnamon
  • 1/2 teaspoon Vanilla extract
  • 1/4 teaspoon Sea salt
Instructions
  1. Preheat the oven to 325°F (160°C).
  2. In a large mixing bowl, combine the rolled oats, pumpkin puree, maple syrup, coconut oil, cinnamon, vanilla extract, and sea salt. Mix well.
  3. Spread the mixture evenly on a baking sheet lined with parchment paper.
  4. Bake for 20-25 minutes, or until golden brown, stirring halfway through.
  5. Remove from the oven and let it cool completely.
  6. Once cooled, add the pecans and pumpkin seeds. Mix well.
  7. Store in an airtight container.
  8. Serve with yogurt or milk for breakfast or enjoy as a healthy snack.
