Ingredients
  • 500 gram Pumpkin
  • 4 teaspoon Peanut Butter
  • 1 medium Onion
  • 2 clove Garlic
  • 4 cup Vegetable Stock
  • 1 cup Coconut Milk
  • 2 tablespoon Lime Juice
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 2 tablespoon Cilantro
Instructions
  1. In a large pot, heat some oil and sauté the onion and garlic until translucent.
  2. Add the pumpkin and cook for a few minutes.
  3. Stir in the vegetable stock and bring to a boil. Reduce heat and simmer until the pumpkin is tender.
  4. Remove from heat and let it cool slightly. Then, blend the mixture until smooth.
  5. Return the soup to the pot and stir in the peanut butter, coconut milk, lime juice, salt, and black pepper.
  6. Simmer for another 10 minutes, stirring occasionally.
  7. Serve hot, garnished with cilantro.
