Ingredients
  • 500 gram Pumpkin
  • 1 cup Coconut milk
  • 1 medium Onion
  • 2 clove Garlic cloves
  • 1 teaspoon Ginger
  • 2 teaspoon Curry powder
  • 1 teaspoon Turmeric powder
  • 1 teaspoon Cumin powder
  • 1 teaspoon Coriander powder
  • 1 teaspoon Red chili powder
  • 1 teaspoon Salt
  • 2 tablespoon Vegetable oil
  • 2 tablespoon Fresh cilantro
  • 4 piece Lime wedges
Instructions
  1. Heat vegetable oil in a large pan over medium heat.
  2. Add chopped onion, minced garlic, and grated ginger. Sauté until the onion turns translucent.
  3. Add curry powder, turmeric powder, cumin powder, coriander powder, red chili powder, and salt. Stir well.
  4. Add diced pumpkin and cook for 5 minutes.
  5. Pour in coconut milk and simmer for 20 minutes or until the pumpkin is tender.
  6. Garnish with fresh cilantro and serve with lime wedges. Enjoy!
