Ingredients
  • 2 cup Pumpkin
  • 1 can Black beans
  • 1 medium Onion
  • 2 clove Garlic
  • 4 cup Vegetable broth
  • 1 teaspoon Cumin
  • 1 teaspoon Chili powder
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1 tablespoon Olive oil
  • 2 tablespoon Cilantro
  • 4 wedge Lime
Instructions
  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, sauté until softened.
  2. Add pumpkin, black beans, vegetable broth, cumin, chili powder, salt, and pepper. Bring to a boil, then reduce heat and simmer for 20 minutes.
  3. Use an immersion blender or transfer the soup to a blender to puree until smooth.
  4. Serve hot, garnished with cilantro and a squeeze of lime juice.
