Ingredients
  • 2 teaspoon Olive oil
  • 1 medium Onion
  • 2 clove Garlic cloves
  • 2 medium Carrots
  • 2 medium Zucchini
  • 1 medium Bell pepper
  • 3 medium Tomatoes
  • 4 cup Vegetable broth
  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried basil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Fresh parsley
Instructions
  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, sauté until softened.
  2. Add carrots, zucchini, bell pepper, and tomatoes. Cook for 5 minutes.
  3. Stir in vegetable broth, thyme, basil, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 20 minutes.
  4. Remove from heat and let the soup rest for 10 minutes.
  5. Garnish with fresh parsley and serve hot.
