Ingredients
  • 2 pound Spaghetti squash
  • 2 tablespoon Olive oil
  • 2 clove Garlic cloves
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Fresh parsley
Instructions
  1. Preheat the oven to 400°F (200°C).
  2. Cut the spaghetti squash in half lengthwise and scoop out the seeds.
  3. Drizzle olive oil over the cut sides of the squash and season with salt and black pepper.
  4. Place the squash halves cut side down on a baking sheet.
  5. Roast in the preheated oven for 40-45 minutes, or until the squash is tender and easily pierced with a fork.
  6. Remove from the oven and let it rest for 5 minutes.
  7. Use a fork to scrape the flesh of the squash into spaghetti-like strands.
  8. Serve the spaghetti squash with a sprinkle of fresh parsley on top.
