Ingredients
  • 1 cup Red Lentils
  • 1 medium Onion
  • 2 medium Carrot
  • 2 stalk Celery
  • 3 clove Garlic
  • 4 cup Vegetable Broth
  • 2 tablespoon Tomato Paste
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Ground Coriander
  • 1 teaspoon Paprika
  • 2 piece Bay Leaves
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 2 tablespoon Fresh Lemon Juice
  • 2 tablespoon Fresh Cilantro
Instructions
  1. Rinse the lentils under cold water and drain.
  2. Chop the onion, carrot, celery, and garlic.
  3. Set the pressure cooker to sauté mode and add a little oil.
  4. Sauté the onion, carrot, celery, and garlic until softened.
  5. Add the lentils, vegetable broth, tomato paste, cumin, coriander, paprika, bay leaves, salt, and black pepper to the pressure cooker.
  6. Close the lid and set the pressure cooker to high pressure for 10 minutes.
  7. Once the cooking time is up, let the pressure release naturally for 5 minutes, then carefully do a quick release.
  8. Stir in the fresh lemon juice and fresh cilantro.
  9. Serve hot and enjoy!
