  • 1 piece Baguette
  • 1 cup Hummus
  • 1 ripe Avocado
  • 1 medium Cucumber
  • 1 medium Red Bell Pepper
  • 1 small Red Onion
  • 2 cup Spinach
  • 1 medium Tomato
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 2 tablespoon Olive Oil
Instructions
  1. Slice the baguette horizontally, creating a top and bottom half.
  2. Spread a generous layer of hummus on the bottom half of the baguette.
  3. Layer the avocado, cucumber, red bell pepper, red onion, spinach, and tomato on top of the hummus.
  4. Sprinkle salt and black pepper over the vegetables.
  5. Drizzle olive oil on top of the vegetables.
  6. Place the top half of the baguette on the sandwich.
  7. Wrap the sandwich tightly in plastic wrap.
  8. Place a cutting board or a heavy object on top of the sandwich to press it down.
  9. Let the sandwich rest for 30 minutes to allow the flavors to meld.
