  • 1 cup Bulgur
  • 1 cup Cherry Tomatoes
  • 1 cup Cucumber
  • 1 cup Red Bell Pepper
  • 1 small Red Onion
  • 0.5 cup Parsley
  • 0.25 cup Mint Leaves
  • 2 tablespoon Lemon Juice
  • 2 tablespoon Olive Oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black Pepper
Instructions
  1. In a bowl, pour boiling water over bulgur and let it sit for 30 minutes.
  2. Meanwhile, chop cherry tomatoes, cucumber, red bell pepper, red onion, parsley, and mint leaves.
  3. Drain the bulgur and fluff it with a fork.
  4. In a large bowl, combine the bulgur, chopped vegetables, parsley, and mint leaves.
  5. In a small bowl, whisk together lemon juice, olive oil, salt, and black pepper.
  6. Pour the dressing over the salad and toss to combine.
  7. Let the salad rest for 10 minutes to allow the flavors to meld.
