Ingredients
  • 500 gram Potatoes
  • 1 small Red onion
  • 2 teaspoon Dijon mustard
  • 3 tablespoon White wine vinegar
  • 4 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Fresh parsley
Instructions
  1. Boil the potatoes until tender. Drain and let them cool. Peel and cut the potatoes into bite-sized pieces. Finely chop the red onion. In a large bowl, whisk together Dijon mustard, white wine vinegar, olive oil, salt, and black pepper. Add the potatoes and red onion to the bowl and toss to coat them with the dressing. Let the salad rest for 10 minutes to allow the flavors to meld. Garnish with fresh parsley before serving.
