Ingredients
  • 500 gram Potatoes
  • 200 gram Cornmeal
  • 2 cup Vegetable broth
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 4 tablespoon Parmesan cheese
  • 2 tablespoon Fresh parsley
Instructions
  1. Peel and dice the potatoes.
  2. Boil the potatoes in a large pot until tender.
  3. Drain the potatoes and mash them until smooth.
  4. In a separate pot, bring the vegetable broth to a boil.
  5. Gradually whisk in the cornmeal, stirring constantly.
  6. Reduce the heat to low and cook the polenta for 15-20 minutes, stirring occasionally.
  7. Stir in the mashed potatoes, olive oil, salt, and pepper.
  8. Cook for an additional 5 minutes, until heated through.
  9. Serve the potato polenta hot, garnished with Parmesan cheese and fresh parsley.
