Ingredients
  • 500 gram Potatoes
  • 2 cup Leeks
  • 4 cup Vegetable broth
  • 2 teaspoon Olive oil
  • 2 clove Garlic
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1 teaspoon Fresh thyme
  • 1 cup Heavy cream
Instructions
  1. Heat olive oil in a large pot over medium heat. Add leeks and garlic, sauté until softened.
  2. Add potatoes, vegetable broth, salt, pepper, and thyme. Bring to a boil, then reduce heat and simmer until potatoes are tender.
  3. Use an immersion blender to puree the soup until smooth.
  4. Stir in heavy cream and cook for an additional 5 minutes.
  5. Serve hot and garnish with fresh thyme leaves.
