Ingredients
  • 500 gram Potatoes
  • 200 gram Green Beans
  • 250 gram Cherry Tomatoes
  • 50 gram Red Onion
  • 20 gram Fresh Parsley
  • 2 teaspoon Olive Oil
  • 1 tablespoon Lemon Juice
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper
Instructions
  1. Boil the potatoes until tender. Drain and let cool.
  2. Trim and blanch the green beans in boiling water for 3 minutes. Drain and rinse with cold water.
  3. Cut the cherry tomatoes in half.
  4. Finely chop the red onion and parsley.
  5. In a large bowl, combine the potatoes, green beans, cherry tomatoes, red onion, and parsley.
  6. In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper.
  7. Pour the dressing over the salad and toss to combine.
  8. Serve chilled.
