Ingredients
  • 500 gram Potatoes
  • 3 teaspoon Olive oil
  • 2 clove Garlic
  • 1 cup Cherry tomatoes
  • 1 cup Fresh basil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 8 piece Baguette slices
Instructions
  1. Preheat the oven to 200°C (400°F).
  2. Wash and dry the potatoes, then cut them into thin slices.
  3. In a bowl, toss the potato slices with olive oil, minced garlic, salt, and black pepper.
  4. Arrange the potato slices on a baking sheet and bake for 20-25 minutes, or until golden and crispy.
  5. While the potatoes are baking, cut the cherry tomatoes into halves and chop the fresh basil.
  6. In a separate bowl, mix the cherry tomatoes, fresh basil, a drizzle of olive oil, salt, and black pepper.
  7. Remove the baked potato slices from the oven and let them cool for a few minutes.
  8. Toast the baguette slices until crispy.
  9. Top each baguette slice with a spoonful of the tomato and basil mixture.
  10. Place a few baked potato slices on top of each bruschetta.
  11. Serve immediately and enjoy!
