Ingredients
  • 2 cup Green peas
  • 2 medium Potatoes
  • 2 medium Carrots
  • 1 small Onion
  • 2 clove Garlic cloves
  • 4 cup Vegetable broth
  • 2 leaf Bay leaves
  • 1 teaspoon Thyme
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Olive oil
Instructions
  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and minced garlic, and sauté until onion is translucent.
  3. Add diced potatoes, sliced carrots, and green peas to the pot.
  4. Pour in vegetable broth and add bay leaves and thyme.
  5. Season with salt and black pepper.
  6. Bring to a boil, then reduce heat and simmer for 25-30 minutes, or until vegetables are tender.
  7. Remove bay leaves before serving.
  8. Serve hot and enjoy!
