Ingredients
  • 2 tablespoon Olive oil
  • 1 medium Onion
  • 3 minced Garlic cloves
  • 4 ripe Tomatoes
  • 2 tablespoon Tomato paste
  • 1 cup Long-grain rice
  • 2 cup Water
  • 1 dried Bay leaf
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 chopped Fresh parsley
Instructions
  1. Heat olive oil in a large saucepan over medium heat. Add the chopped onion and minced garlic, and cook until the onion is translucent.
  2. Add the chopped tomatoes and tomato paste to the saucepan, and stir well. Cook for 5 minutes, until the tomatoes start to break down.
  3. Add the rice, water, bay leaf, salt, and black pepper to the saucepan. Stir well and bring to a boil.
  4. Reduce the heat to low, cover the saucepan, and let the rice simmer for 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
  5. Remove the saucepan from the heat and let the rice rest for 5 minutes.
  6. Fluff the rice with a fork, remove the bay leaf, and garnish with fresh parsley before serving.
