Ingredients
  • 2 cup Dried brown beans
  • 1 medium Onion
  • 4 clove Garlic cloves
  • 4 cup Vegetable broth
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Cumin powder
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Olive oil
  • 2 tablespoon Fresh cilantro
Instructions
  1. Rinse the dried brown beans and soak them overnight in water.
  2. Drain the soaked beans and rinse again.
  3. In a large pot, heat olive oil over medium heat.
  4. Add chopped onion and minced garlic cloves to the pot and sauté until translucent.
  5. Add the soaked beans, vegetable broth, smoked paprika, cumin powder, salt, and black pepper to the pot.
  6. Bring the mixture to a boil, then reduce the heat to low and simmer for about 1 hour or until the beans are tender.
  7. Remove from heat and let the beans rest for 10 minutes.
  8. Serve the Poor Mans Brown Beans garnished with fresh cilantro.
