Ingredients
  • 4 piece Ripe Plantains
  • 4 tablespoon Vegetable Oil
  • 1 medium Onion
  • 2 clove Garlic
  • 1 teaspoon Ginger
  • 2 medium Tomato
  • 1 piece Scotch Bonnet Pepper
  • 1 cup Coconut Milk
  • 1 teaspoon Thyme
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 2 tablespoon Cilantro
Instructions
  1. Peel the plantains and cut them into diagonal slices.
  2. Heat oil in a frying pan and fry the plantain slices until golden brown. Remove and set aside.
  3. In the same pan, sauté the onion, garlic, and ginger until fragrant.
  4. Add the tomatoes and scotch bonnet pepper. Cook until the tomatoes are soft.
  5. Pour in the coconut milk and add thyme, salt, and black pepper. Stir well.
  6. Add the fried plantain slices to the sauce and simmer for 5 minutes.
  7. Garnish with cilantro and serve hot.
