Ingredients
  • 2 piece Ripe plantains
  • 1 cup All-purpose flour
  • 1 teaspoon Baking powder
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Ground cinnamon
  • 1/4 teaspoon Nutmeg
  • 1/2 teaspoon Vanilla extract
  • 1/2 cup Coconut milk
  • as needed for frying Vegetable oil
Instructions
  1. Peel and mash the ripe plantains.
  2. In a bowl, combine the mashed plantains, all-purpose flour, baking powder, salt, ground cinnamon, nutmeg, vanilla extract, and coconut milk. Mix well to form a thick batter.
  3. Heat vegetable oil in a deep pan or pot.
  4. Drop spoonfuls of the batter into the hot oil and fry until golden brown.
  5. Remove the puffs from the oil and drain on a paper towel.
  6. Serve hot and enjoy!
