Ingredients
  • 2 cup Beets
  • 1 cup Potatoes
  • 1 medium Onion
  • 2 medium Carrot
  • 1 cup Cabbage
  • 4 cup Vegetable Broth
  • 2 clove Garlic
  • 2 tablespoon Lemon Juice
  • 4 tablespoon Sour Cream
  • 2 tablespoon Dill
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper
Instructions
  1. In a large pot, boil the beets until tender. Remove the beets from the pot, peel, and grate them.
  2. In the same pot, add the vegetable broth, grated beets, chopped onion, carrot, and cabbage. Bring to a boil and simmer for 20 minutes.
  3. In a separate pot, boil the potatoes until fork-tender. Drain and mash the potatoes.
  4. Add the mashed potatoes to the soup pot and stir well. Cook for an additional 10 minutes.
  5. Season the soup with salt, black pepper, and lemon juice.
  6. Serve the soup hot, garnished with a dollop of sour cream and chopped dill.
