Ingredients
  • 3 cup Cooked rice
  • 1 cup Pineapple chunks
  • 1 cup Mixed vegetables (carrots, peas, corn)
  • 1 medium Onion
  • 2 clove Garlic cloves
  • 2 tablespoon Soy sauce
  • 2 tablespoon Vegetable oil
  • 2 tablespoon Cashew nuts
  • 2 tablespoon Raisins
  • 1 teaspoon Curry powder
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
Instructions
  1. Heat vegetable oil in a large pan or wok.
  2. Add chopped onion and minced garlic, sauté until fragrant.
  3. Add mixed vegetables and cook until tender.
  4. Push the vegetables to one side of the pan and add the cooked rice to the other side.
  5. Drizzle soy sauce over the rice and mix well.
  6. Add pineapple chunks, cashew nuts, raisins, curry powder, salt, and black pepper. Stir-fry for a few minutes.
  7. Remove from heat and let it rest for 5 minutes.
  8. Serve hot and enjoy!
