Ingredients
  • 1 cup Couscous
  • 2 cup Vegetable broth
  • 2 tablespoon Olive oil
  • 1 medium Onion
  • 2 medium Carrot
  • 2 clove Garlic
  • 1/4 cup Raisins
  • 1/4 cup Almonds
  • 1 teaspoon Cumin
  • 1/2 teaspoon Cinnamon
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
  • 2 tablespoon Fresh parsley
Instructions
  1. In a saucepan, heat olive oil over medium heat. Add the onion, carrot, and garlic, and sauté until softened.
  2. Add the couscous and stir to coat with the oil. Cook for 1-2 minutes.
  3. Add the vegetable broth, raisins, almonds, cumin, cinnamon, salt, and black pepper. Bring to a boil.
  4. Reduce heat to low, cover, and simmer for 10 minutes or until the couscous is tender and the liquid is absorbed.
  5. Remove from heat and let it rest for 5 minutes.
  6. Fluff the couscous with a fork and garnish with fresh parsley before serving.
