Ingredients
  • 1 cup Mung beans
  • 1 head Bok choy
  • 1 medium Onion
  • 3 clove Garlic
  • 1 medium Tomato
  • 2 tablespoon Vegetable oil
  • 4 cup Water
  • 1 teaspoon Salt
  • 0.5 teaspoon Pepper
Instructions
  1. Rinse the mung beans and soak in water for at least 1 hour.
  2. In a large pot, heat vegetable oil over medium heat. Saute garlic, onion, and tomato until softened.
  3. Add the soaked mung beans and water. Bring to a boil, then reduce heat and simmer for 30 minutes or until the beans are tender.
  4. Add the bok choy and season with salt and pepper. Cook for an additional 5 minutes.
  5. Serve hot and enjoy!
