Ingredients
  • 2 medium-sized Zucchini
  • 1 cup Basil leaves
  • 2 tablespoon Pine nuts
  • 1 clove Garlic
  • 3 tablespoon Olive oil
  • 1 tablespoon Lemon juice
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 cup Cherry tomatoes
  • 2 tablespoon Parmesan cheese
Instructions
  1. Spiralize the zucchini into zoodles.
  2. In a food processor, combine basil leaves, pine nuts, garlic, olive oil, lemon juice, salt, and black pepper. Blend until smooth.
  3. Heat a large pan over medium heat and add the zoodles. Cook for 2-3 minutes until slightly softened.
  4. Add the pesto sauce to the pan and toss to coat the zoodles evenly.
  5. Cook for another 2 minutes until heated through.
  6. Serve the pesto zoodles topped with cherry tomatoes and grated Parmesan cheese.
