Ingredients
  • 2 cup Basmati rice
  • 1 bunch Fresh herbs (parsley, dill, coriander)
  • 1 cup Fava beans
  • 1 medium Onion
  • 2 cloves Garlic cloves
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Turmeric
  • 1 pinch Saffron
  • 4 cup Water
Instructions
  1. Wash the rice and soak it in water for 2 hours.
  2. Bring a pot of water to boil and add the rice. Cook for 5 minutes, then drain and set aside.
  3. In a separate pot, heat olive oil and sauté the chopped onion and garlic until golden.
  4. Add the fava beans, turmeric, and saffron to the pot and cook for 5 minutes.
  5. Add the fresh herbs and salt to the pot and cook for another 5 minutes.
  6. Layer the partially cooked rice on top of the herb mixture in the pot.
  7. Poke a few holes in the rice with the handle of a wooden spoon to allow steam to escape.
  8. Pour water over the rice until it is covered by about 1 inch.
  9. Cover the pot with a tight-fitting lid and cook over low heat for 30 minutes.
  10. Remove the pot from heat and let it rest for 10 minutes.
  11. Gently fluff the rice with a fork before serving.
