Ingredients
  • 2 cup Split Peas
  • 1 medium Onion
  • 2 medium Carrot
  • 2 stalk Celery
  • 3 clove Garlic
  • 4 cup Vegetable Stock
  • 1 piece Bay Leaf
  • 1 teaspoon Thyme
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 2 tablespoon Olive Oil
  • 2 cup Water
Instructions
  1. Rinse the split peas and set aside.
  2. In a large pot, heat olive oil over medium heat.
  3. Add the chopped onion, carrot, celery, and garlic. Cook until softened, about 5 minutes.
  4. Add the rinsed split peas, vegetable stock, bay leaf, thyme, salt, and black pepper.
  5. Bring to a boil, then reduce heat and simmer for 1 hour, or until split peas are tender.
  6. Remove the bay leaf and thyme sprig.
  7. Use an immersion blender or transfer the soup to a blender and blend until smooth.
  8. Return the soup to the pot and add water if needed to reach desired consistency.
  9. Simmer for an additional 10 minutes.
  10. Serve hot and enjoy!
