Ingredients
  • 1.5 cup Basmati Rice
  • 1 cup Mixed Vegetables (carrots, peas, beans)
  • 1 medium Onion
  • 2 piece Green Chilies
  • 1 inch Ginger
  • 3 clove Garlic
  • 1 teaspoon Cumin Seeds
  • 1 inch Cinnamon Stick
  • 4 piece Cloves
  • 2 piece Cardamom Pods
  • 1 piece Bay Leaf
  • 1/2 teaspoon Turmeric Powder
  • 1/2 teaspoon Red Chili Powder
  • 1/2 teaspoon Garam Masala Powder
  • 1 teaspoon Salt
  • 3 cup Water
  • 2 tablespoon Coriander Leaves
  • 1 tablespoon Lemon Juice
Instructions
  1. Wash the basmati rice and soak it in water for 30 minutes.
  2. Heat oil in a pan and add cumin seeds, cinnamon stick, cloves, cardamom pods, and bay leaf. Fry for a minute.
  3. Add sliced onions, chopped green chilies, grated ginger, and minced garlic. Saute until onions turn golden brown.
  4. Add mixed vegetables and cook for 2-3 minutes.
  5. Drain the soaked rice and add it to the pan. Mix well.
  6. Add turmeric powder, red chili powder, garam masala powder, and salt. Mix everything together.
  7. Add water and bring it to a boil. Reduce the heat, cover the pan, and let it simmer for 15-20 minutes or until the rice is cooked.
  8. Once the rice is cooked, remove from heat and let it rest for 5 minutes.
  9. Fluff the rice with a fork and garnish with chopped coriander leaves and lemon juice.
  10. Serve hot and enjoy!
