Ingredients
  • 2 tablespoon Peanut Butter
  • 400 canned Tomatoes
  • 1 medium Onion
  • 2 clove Garlic
  • 1 teaspoon Ginger
  • 2 cup Vegetable Stock
  • 1 teaspoon Curry Powder
  • 0.5 teaspoon Cayenne Pepper
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black Pepper
  • 2 cup Spinach
  • 1 tablespoon Lime Juice
  • 2 tablespoon Fresh Cilantro
Instructions
  1. Heat oil in a large pot over medium heat. Add onion, garlic, and ginger. Cook until onion is translucent.
  2. Add curry powder, cayenne pepper, salt, and black pepper. Stir well.
  3. Add peanut butter and stir until melted.
  4. Add canned tomatoes and vegetable stock. Bring to a boil.
  5. Reduce heat and simmer for 20 minutes.
  6. Stir in spinach and lime juice. Cook for an additional 5 minutes.
  7. Serve hot, garnished with fresh cilantro.
