Rinse quinoa under cold water.

In a saucepan, bring water and quinoa to a boil. Reduce heat and let simmer for 12-15 minutes until quinoa is tender.

Meanwhile, chop peaches and almonds.

In a separate pan, toast almonds over medium heat until golden brown.

Once quinoa is cooked, remove from heat and let rest for 5 minutes.

Stir in chopped peaches, toasted almonds, maple syrup, cinnamon, vanilla extract, and salt.
