Ingredients
  • 2 cup Green peas
  • 1 medium Onion
  • 2 clove Garlic cloves
  • 4 cup Vegetable broth
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoon Fresh mint leaves
  • 1 tablespoon Lemon juice
Instructions
  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and minced garlic cloves. Sauté until onion is translucent.
  3. Add green peas and vegetable broth. Bring to a boil and then reduce heat to simmer for 20 minutes.
  4. Using an immersion blender, blend the soup until smooth.
  5. Season with salt and black pepper. Stir well.
  6. Remove from heat and let it rest for 5 minutes.
  7. Serve hot, garnished with fresh mint leaves and a drizzle of lemon juice.
