Ingredients
  • 2 cup All-purpose flour
  • 1 cup Granulated sugar
  • 2 cup Shredded coconut
  • 2 teaspoon Baking powder
  • 1/4 teaspoon Salt
  • 1/2 cup Coconut milk
  • 1/2 cup Vegetable oil
  • 1 teaspoon Vanilla extract
  • 1/2 cup Powdered sugar
Instructions
  1. In a mixing bowl, combine the all-purpose flour, granulated sugar, shredded coconut, baking powder, and salt.
  2. Add the coconut milk, vegetable oil, and vanilla extract to the dry ingredients. Mix until well combined.
  3. Preheat the oven to 350°F (180°C).
  4. Roll out the dough on a floured surface to a thickness of about 1/4 inch.
  5. Cut out circles using a round cookie cutter or a glass.
  6. Place the circles on a baking sheet lined with parchment paper.
  7. Bake for 15-20 minutes or until golden brown.
  8. Remove from the oven and let cool.
  9. Dust with powdered sugar before serving.
