Ingredients
  • 250 gram Pasta
  • 200 gram Lentils
  • 1 medium Onion
  • 2 medium Carrot
  • 2 stalk Celery
  • 2 clove Garlic
  • 2 tablespoon Tomato paste
  • 1 can Crushed tomatoes
  • 1 cup Vegetable broth
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1 teaspoon Dried oregano
  • 10 leaves Fresh basil leaves
  • 4 tablespoon Grated Parmesan cheese
Instructions
  1. Cook the pasta according to package instructions. Drain and set aside.
  2. In a large pot, heat olive oil over medium heat. Add onion, carrot, celery, and garlic. Cook until softened.
  3. Add lentils, tomato paste, crushed tomatoes, vegetable broth, salt, pepper, and dried oregano. Stir well.
  4. Bring to a boil, then reduce heat and simmer for 20 minutes, or until lentils are tender.
  5. Stir in cooked pasta and fresh basil leaves. Cook for an additional 5 minutes.
  6. Serve hot, topped with grated Parmesan cheese.
