Ingredients
  • 200 gram Pasta
  • 200 gram Sweet Potato
  • 100 gram Peas
  • 4 cup Vegetable broth
  • 1 piece Onion
  • 2 clove Garlic
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Fresh parsley
Instructions
  1. In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic, and sauté until softened.
  2. Add peeled and diced sweet potato, peas, and vegetable broth. Bring to a boil and simmer for 15 minutes or until the sweet potato is tender.
  3. In a separate pot, cook the pasta according to package instructions. Drain and set aside.
  4. Once the sweet potato is cooked, use an immersion blender to blend the soup until smooth. Alternatively, transfer the soup to a blender and blend in batches.
  5. Return the soup to the pot and add the cooked pasta. Season with salt and black pepper to taste.
  6. Simmer for an additional 5 minutes to allow the flavors to meld together.
  7. Serve hot, garnished with fresh parsley.
