Ingredients
  • 2 cup Fresh corn kernels
  • 1 cup Cherry tomatoes, halved
  • 1 cup Cucumber, diced
  • 1/4 cup Red onion, finely chopped
  • 1/4 cup Fresh cilantro, chopped
  • 2 tablespoon Lime juice
  • 2 tablespoon Olive oil
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
Instructions
  1. In a large pot, bring water to a boil. Add the corn kernels and cook for 3-4 minutes until tender. Drain and let cool.
  2. In a large bowl, combine the cooked corn, cherry tomatoes, cucumber, red onion, and cilantro.
  3. In a small bowl, whisk together the lime juice, olive oil, salt, and black pepper.
  4. Pour the dressing over the corn mixture and toss to combine.
  5. Serve immediately or refrigerate for a few hours to let the flavors meld together.
