Ingredients
  • 2 pound Butternut squash
  • 2 medium Apples
  • 1 medium Red onion
  • 2 tablespoon Olive oil
  • 2 tablespoon Maple syrup
  • 1 teaspoon Fresh thyme
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
Instructions
  1. Preheat the oven to 400°F (200°C).
  2. Peel and cut the butternut squash into cubes.
  3. Core and slice the apples.
  4. Slice the red onion.
  5. In a large bowl, combine the butternut squash, apples, and red onion.
  6. Drizzle with olive oil and maple syrup. Sprinkle with fresh thyme, salt, and black pepper. Toss until well coated.
  7. Spread the mixture onto a baking sheet in a single layer.
  8. Roast in the preheated oven for 35-40 minutes, or until the squash is tender and lightly browned.
  9. Remove from the oven and let it rest for 5 minutes.
  10. Serve hot and enjoy!
