  • 2 pound Red Potatoes
  • 2 tablespoon Olive Oil
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Dried Thyme
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper
  • 1 tablespoon Fresh Parsley
Instructions
  1. Preheat the oven to 425°F (220°C).
  2. Wash and scrub the red potatoes. Cut them into small bite-sized pieces.
  3. In a large bowl, toss the potatoes with olive oil, garlic powder, dried thyme, salt, and black pepper until well coated.
  4. Spread the potatoes in a single layer on a baking sheet.
  5. Roast in the preheated oven for 30-35 minutes, or until the potatoes are golden and crispy.
  6. Remove from the oven and let rest for 5 minutes.
  7. Sprinkle with fresh parsley before serving.
