Ingredients
  • 500 gram Beets
  • 2 teaspoon Olive Oil
  • 1 tablespoon Apple Cider Vinegar
  • 1 teaspoon Honey
  • 1 teaspoon Dijon Mustard
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black Pepper
  • 1 tablespoon Fresh Parsley
Instructions
  1. Preheat the oven to 400°F (200°C).
  2. Scrub the beets and cut off the tops.
  3. In a bowl, mix the olive oil, apple cider vinegar, honey, Dijon mustard, salt, and black pepper to make the vinaigrette.
  4. Toss the beets in the vinaigrette until coated.
  5. Place the beets on a baking sheet and roast in the oven for 40 minutes or until tender.
  6. Remove the beets from the oven and let them rest for 10 minutes.
  7. Peel the skins off the beets and slice them.
  8. Drizzle the remaining vinaigrette on top of the roasted beets.
  9. Garnish with fresh parsley.
  10. Serve as an appetizer or side dish.
