  • 1 cup Cherry tomatoes
  • 1 cup Canned artichoke hearts
  • 0.5 cup Fresh basil leaves
  • 0.5 cup Red onion
  • 0.5 cup Feta cheese
  • 2 tablespoon Extra virgin olive oil
  • 2 tablespoon Lemon juice
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
Instructions
  1. Cook the orzo according to package instructions. Drain and rinse with cold water.
  2. In a large bowl, combine the cooked orzo, cherry tomatoes (halved), canned artichoke hearts (quartered), fresh basil leaves (chopped), red onion (thinly sliced), and crumbled feta cheese.
  3. In a small bowl, whisk together the extra virgin olive oil, lemon juice, salt, and black pepper.
  4. Pour the dressing over the salad and toss to combine.
