Ingredients
  • 500 gram Organic Carrots
  • 2 teaspoon Ginger
  • 1 medium Onion
  • 2 clove Garlic
  • 4 cup Vegetable Stock
  • 1 cup Coconut Milk
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper
  • 2 tablespoon Fresh Cilantro
  • 2 tablespoon Olive Oil
Instructions
  1. Heat olive oil in a large pot over medium heat. Add chopped onion, minced garlic, and grated ginger. Cook until the onion is translucent.
  2. Add the sliced carrots and vegetable stock. Bring to a boil, then reduce heat and simmer until the carrots are tender.
  3. Remove the pot from heat and let it cool slightly. Use an immersion blender or a regular blender to puree the soup until smooth.
  4. Return the soup to the pot and stir in coconut milk, salt, and black pepper. Heat over low heat until warmed through.
  5. Serve the soup hot, garnished with fresh cilantro.
