Ingredients
  • 2 slice Whole grain bread
  • 1 medium Zucchini
  • 1 small Red bell pepper
  • 1 small Red onion
  • 1 tablespoon Olive oil
  • 1 tablespoon Balsamic vinegar
  • 4 leaves Fresh basil leaves
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Garlic powder
Instructions
  1. Preheat the grill or oven to medium-high heat.
  2. Slice the zucchini, red bell pepper, and red onion into thin strips.
  3. In a bowl, toss the sliced vegetables with olive oil, balsamic vinegar, salt, black pepper, and garlic powder.
  4. Grill or roast the vegetables for about 5-7 minutes until they are tender and slightly charred.
  5. Toast the whole grain bread slices.
  6. Place the grilled or roasted vegetables on top of the bread slices.
  7. Garnish with fresh basil leaves.
  8. Serve the open-face vegetable sandwiches immediately.
