Ingredients
  • 2 cup White beans
  • 1 medium Onion
  • 2 medium Carrot
  • 2 stalk Celery stalks
  • 3 clove Garlic cloves
  • 4 cup Vegetable broth
  • 2 tablespoon Tomato paste
  • 1 cup Basil leaves
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Olive oil
Instructions
  1. Soak the white beans overnight in water. Drain and rinse.
  2. In a large pot, heat olive oil over medium heat. Add chopped onion, carrot, celery, and minced garlic. Cook until vegetables are softened.
  3. Add soaked beans, vegetable broth, tomato paste, basil leaves, salt, and black pepper to the pot. Bring to a boil, then reduce heat and simmer for about 1 hour or until beans are tender.
  4. Remove from heat and let the soup rest for 10 minutes.
  5. Serve hot and garnish with fresh basil leaves.
