Ingredients
  • 1 cup Green olives
  • 1 cup Black olives
  • 1 cup Kalamata olives
  • 1 cup Red bell pepper
  • 1 cup Green bell pepper
  • 2 stalk Celery
  • 1 small Red onion
  • 2 clove Garlic cloves
  • 1 cup Fresh parsley
  • 3 tablespoon Olive oil
  • 2 tablespoon Red wine vinegar
  • 1 teaspoon Dried oregano
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
Instructions
  1. In a large bowl, combine the green olives, black olives, kalamata olives, red bell pepper, green bell pepper, celery, red onion, garlic cloves, and fresh parsley.
  2. In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and black pepper.
  3. Pour the dressing over the olive mixture and toss to coat.
  4. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
  5. Serve as a topping for muffalettas or as a side salad.
